Do you think I could just leave this part blank and it'd be okay? We're just going to replace the whole thing with a header image anyway, right?

It's hard to tell. An key, acorn, an umbrella, a tree, and a star all seem to fit into a single-block space. Probably the best way to measure it would be to compare it to the size of the skull decoration, since it's about as large as a smiley yet more realistic like a real head.

One pixel can be different from computer to computer. I saw some ad-tables in Italy, one pixel was like 1cm, when for us it’s less than a mm...
I think everything is 1×1 meters

Friendly reminder that monitors have different dots per inch, and therefore it's not possible to make a general estimation of a block's length.
To make an effective unit list, you would have to calculate the block size for each single common dpi, which can get annoying.

Well lets see here:
1. They are 1 human head big
2. They are 1 dog head big
3. They are 1 raindrop big
4. They are ~2 christmas trees big
5. They are around the size of a standard dinner plate
6. They are the size of an eyeball
7. They are the size of a seagull sans the wings
EE proportions are kind of messed up...

"The point to make a good running game depends on the proportions of graphics to the real world. If you don't have correct proportions your game will be good."
Umm... Lets just say each block is 1x1 metre, so some things grow while others shrink in this world
