so yeah, besides documents and food, what should we take with us?

Freeze dried packets of tofu, I was on travel in Cambodia, the little kids in the slums kept asking me for these things ... depending on where you're traveling, you could consider an AC adapter. At the same time, if you're just taking fancy electronics that already have their own adapters, consider not worrying about this lol.
