we've had like 4 EE servers in the past and the most grief-y any of them got was a flood of angry chickens.

vanilla-like server? While I like those, they tend to have a short lifespan (see NVD's server for reference)

actually, i remember me and ninja moved up someone's house from the ground into the sky at the height of nearly 250 blocks
also instanity blowed up my house using 3 creepers
