In games when you know you're going to loose and die, e.g. they are super geared up and you didnt have time to even get a helmet, and they just have this OP gun and are super highly ranked, but you know you're going to die, so instead of admitting defeat, you run away and hide from them to stay alive as long as possible before the inevitable, death.
I find this will to live interesting.
In games this will to live has made me wander many hours trying to look for the last guy before his to-be-done death.
What do you think about the will to live?

I think you should qualify your discussion with "in video games that have no real-world bearings"
I want to emphasize that your "will to live" isn't all-encompassing. If the loss is evident and unavoidable, there's reasonable chance the individual will just finish the game early.
However, your arrogant assumption that the event is unavoidable might not match what the other individual assumes, how they perceive the situation. In your game, if there is a timer or a chance that you'll screw up, the pursued individual may attempt to avail themselves of other game tactics/factors.

I was playing one level 30 minutes because the player was hidng good... But later I won...
Two of many human's natural tendencies are to be strong and to be safe. That's why try to win and when that can't happen, you hide because you feel good when you are safe. You don't admit defeat if you (usually subconsciously) strongly believe you can do something to make yourself proud (usually subconsciously) and feel good, e.g successfully defending, successfully escaping, successfully hiding for quite long time etc..
(ofc there are many many other factors, for example being curious on how well you can perform)

I always hide / run if the enemy is OP. Because there is always a chance you can successfully sneak attack them or the screw up in some way so that they die or become vulnerable.
Plus there's always the good old run / hide for long enough and hope they leave the game
