Do you think I could just leave this part blank and it'd be okay? We're just going to replace the whole thing with a header image anyway, right?

It would be great if you see you have made a typo to edit your post without the "Last edited by Unknown_Username54" or the Last edited by AnatolyEE
It's just an edit, no reason to get upset over it.

How about we put a "last edited" mark on all posts, regardless of whether the post has been edited or not. It would just default to the post time.

Well, the "solution" here would stem from why we don't want the edit mark. If it's awful to look at, could we consider a different way to show the edit time? Perhaps a quaint little icon, or a hover spot, etc
If people don't like seeing it, putting that text on every post is a bit of a step back.

Edit: the main part being - if someone replies to you any edits will leave a mark even if it's before 10 minutes

It could go in that space above each post. The one with the post time.
So instead of:
<a href="viewtopic.php?pid=0#p0">Today 00:00:00</a>
do something like this:
<a href="viewtopic.php?pid=0#p0">Today 00:00:00</a><em style="color:#8f8f8f;"> - Last edited Today 01:00:00 by Username</em>
Obviously using a class so the color is independent of the theme.

Hovering over the pencil reveals the last edited time.

Sorry, haven't seen.

No. Because it clearly appears when a post was edited, a better way was removing it at all.

holy **** I had no idea you could style EM tags. never thought of it.
but yeah, that's not a bad place for it.
i didn't even know that there is an em tag btw. You can style any tag if it's one of the global ones, which don't access another scripting language (not <script> <style> ...)

I have never seen you can post in the middle of the topic

You can style any tag, by default <script> has `display:none;`, if you give it the style `display:block;` you will see the script on the page.
Edit:
You can also make your own tags `<koya></koya>` and apply stylings to it; possible with HTML5 and CSS3

The pencil could even go next to the post time.
