I'd be interested if it was a modpack like Tekkit or FTB. Anything vanilla is super boring to me cause it gets boring real fast.

1-3:   every now and then              (10-30 minutes a day)
4-7:   regularly                       (a little less than an hour per day)
7-13:  a lot                           (1-2 hours per day)
14-27: MC is a pretty big hobby for me (2-4 hours per day)
28+:   MC is my job                    (4+ hours per day)

Yeah that's the problem I was having. I want to create awesome stuff (Omashu & Western Air Temple are on my list) but it's nearly impossible and far less enjoyable by yourself. Minecraft is really meant to be played with other people, even if you don't see them every waking moment.

4 think vanilla is fine (neutral-ish)
4 strongly don't want mods

Still in the air but it looks as though it'll be a vanilla server. Personally I like the vanilla gameplay, although if there's something that's an obvious improvement, such as lag removers, then I'm all for it. Maybe a plugin or two to encourage interacting with each other, such as economy. But I won't make any decisions until I make a poll or something.

While certain mods are useful such as "keep inventory", and "anti-grief", imo it takes away from the thrill of the game

When you fall in lava, you're supposed to get that sinking feeling at the pit of your stomach when you realize you're losing those 14 diamonds you mined, not that "oh well, I'm just gonna respawn with em". Or when a creeper is in your house, the struggle to get it out or kill it without it blowing up and destroying everything (unless you have anti-griefing).

IMO this is what makes minecraft fun

Those aren't mods, those are game rules, but I do agree that keep inventory and anti-grief kinda takes away from the fun. When I think of mods I'm thinking of mods that add content like magic (ThaumCraft, Ars Magica 2, Witchery, Chromaticraft, etc.), machines (RotaryCraft, ReactorCraft, IndustrialCraft, Big Reactors, MineChem, Thermal Expansion, Mekanism, etc.), biomes (Biomes O Plenty), tools (Tinkers Construct), and all that fancy stuff. They make end game more time consuming to get too, yet more fun. Although some people couldn't run a bunch of mods and it might confuse alot of people, but hey we'll have a Minecraft community that could help each other with those content mods.

I somewhat agree that these mods expand capabilities and make the game more exciting, but it's easy to get lost in the technicality of it. That's my biggest concern with these huge mods. They add dozens of singletons (blocks which serve one specific purpose), which divide the game into sub-games. They've gotten a lot better at cooperating with each other (for example, using the same minerals, using power sources from other mods, etc.), but you still need to be picky to create a realistic balance. The second biggest concern is, as you said, CPU capabilities. Not only is it strenuous on the server, but also the clients.

Vanilla is appealing not because it's more exciting but because it's limiting. Sometimes, getting everything you want isn't very fun.

You're right these plugins are for wimps. If I were to have an anti-grief plugin it would only be used to identify the culprit and remove them from the whitelist. But I don't think I'll have that problem because most of the applicants thusfar are pretty chill and not 12 years old.

Those aren't mods, those are gamerules.
Keep inventory can be done with "/gamerule keepInventory true"
Ani-grief (mob griefing) can be done with "/gamerule doMobGriefing false"

I'm not disagreeing, though. It's boring knowing that you can't lose your items or have creepers destroy your base.
