Every time I go into a level, it says it has 0 plays... This happened after the update

you just have to get some people in there so the count updates, then your old playcount will be back

Even when I join the popular levels this happens. In the lobby it has the correct # of plays and in the actual world it shows 0 plays

Very simple solution, reset the name. Everyone who was in at that time will see the correct number. The most recent update might have fixed it though.
