if you put down a blue coin, then replace it with a gold coin, then delete the gold coin, you will have no coins, but the coin display in the top right will say that there is. do this as many times as you want.
interestingly, this doesn't work for gold coins.
EDIT: to delete the phantom coins, do the same process in reverse.
